No-Knead Crusty Artisan Bread

For my Birthday Celebration.  Nam invited a few sisters and served up lunch.  True hospitality and such a wonderful way to get to know people.

(The bread pictured here is based on the following recipe, but has a few add-ins, like pumpkin and pumpkin seeds).

Cook Time: 45 hours

Yield: 1

Ingredients

 3 cups all-purpose flour

 1 1/2 cups water

 1 tsp sea salt

 1/2 tsp dried Rosemary

 1/2 tsp dried Thyme

 1/2 cup of natural yeast or-1 tsp yeast

Instructions

1. In a large bowl, stir together the flour, salt, herbs and yeast. Add the water and using a wooden spoon stir together

until the mixture resembles a shaggy dough.

2. Cover dough with a plastic wrap and let sit in room temperature for 18 hours. Dough will bubble up and rise.

3. After dough is ready, preheat oven to 425 F.

4. Turn the dough onto a well-floured surface and with floured hands form the dough into a ball or 2.  Let the dough

rest on a baking sheet line with a silicon sheet or parchment paper, cover with a towel.

5. Let it rise until double about 3-4 hours. While dough is resting,  preheated oven .

6. Make a slit in the middle of the dough with scissors , brush with olive oil, sprinkle with Parmesan cheese.

7. Bake for 30 minutes. Let bread cool on rack for 15 minutes before serving.
